Buffalo Chicken Meatballs on the Big Green Egg ( From Sunshinestate Eggfest 2015 )
I like to use my big green egg to create a twist on everything !
So this is my version of the classic buffalo chicken wings:
- oil spray (I used my mister)
- 1 1/4 lb ground chicken
- 1/4 cup panko crumbs
- 1 large egg
- 2 scallions, chopped
- 3 tbs of Calypso Kick Rub
- 1 clove crushed garlic
- 1/3 cup Franks Hot sauce
- 1/4 cup blue cheese crumbles OR Blue cheese dressing
In a large bowl, combine the ground chicken, panko crumbs, egg, scallions, celery, carrot and garlic; season with 3 tbs of Calypso Kick Rub.
Using clean hands, mix until combined. Roll the mixture (1/8 cup each) into 26 round meatballs.
OVEN VERSION :
Place meatballs onto prepared baking sheet and bake until cooked through and golden, about 18 to 20 minutes.
GRILL VERSION :
Light your big green egg and set up for indirect heat ( legs up )
Get your egg up to a steady 350 degrees
Place meatballs on the egg and cook for no more than 20-23 minutes.
( If using an oven the same temperature and time will work )
Place the meatballs in a bowl or brush your buffalo sauce on the meatballs . Serve immediately,top with crumbles or dressing and serve
