Place the ribs directly on the smoker grates, bone side down.
Close the smoker lid and let the ribs smoke for approximately 3 to 4 hours at 225°F (107°C), or until the internal temperature reaches around 195°F (90°C) and the meat is tender. The smoking time may vary, so use a meat thermometer to check for doneness.
Optional: Glaze with barbecue sauce:
If desired, during the last 30 minutes of smoking, brush the ribs with your favorite barbecue sauce.
Allow the sauce to caramelize on the ribs by leaving them on the smoker for an additional 15 minutes.
Rest and serve:
Once the ribs are cooked to your desired tenderness, carefully remove them from the smoker and let them rest for about 10 minutes.
Slice the ribs between the bones and serve them hot with additional barbecue sauce on the side, if desired.
