Cherry Smoked Chuck Roast
Ingredients
- Caribeque Big & Bold Beef Rub
- 3 to 4 pound chuck roast
- Hot water and a water pan
- 1/2 cup beef broth or beer
Directions
- Rub all sides of the chuck roast with Beef Rub
- Let the chuck roast rest at room temperature while getting the smoker ready.
- Preheat smoker to 225°-250°
- Place water pan above coals
- Add 2 cherry chunks on top the hot coals
- Smoke the chuck roast at 225°-250° until it reaches 203° internal temperature
- Place the roast in a foil pan and add 1/2 cup of beef broth or your favorite beer
- Allow to rest for at least 1 hour before slicing
- Note:Cooking time will vary
- You're looking at 90 to 120 minutes per pound on average
