Smoked Chicken Halves with Caribeque Island Thyme
Ingredients:
• 2 chicken halves
• 3 tablespoons Caribeque Island Thyme seasoning
• 2 tablespoons olive oil
Instructions:
1. Preparation:
• Preheat your Kamado grill to 275°F, setting it up for indirect cooking.
• Pat the chicken halves dry with paper towels.
2. Seasoning:
• Rub the chicken halves all over with olive oil.
• Generously sprinkle Caribeque Island Thyme seasoning on both sides of the chicken halves, making sure to coat evenly.
3. Smoking:
• Place the chicken halves on the grill, skin side up.
• Add a few chunks of your preferred smoking wood (e.g., apple or cherry) to the coals for additional flavor.
• Smoke the chicken at 275°F for about 1.5 to 2 hours, or until the internal temperature reaches 165°F in the thickest part of the breast and 175°F in the thighs.
4. Finishing:
• Remove the chicken from the grill and let it rest for 10 minutes before serving.
